To start off my day, I have a cup of coffee with almond milk. Along with my coffee, I have a piece of organic whole grain toast with peanut butter, topped with strawberries and banana slices. After breakfast, I normally wait about an hour or so before I do my workout so that I have time to digest.
For lunch, I had a Mexican salad. In this salad there were carrots slices, avocado slices, romaine lettuce, cabbage, corn, black beans, edamame, small pieces of corn tortilla chips, chicken and balsamic dressing.
Later in the afternoon, I felt like having a snack so I made a smoothie bowl. This smoothie bowl is similar to the one that I made in my "How to Make the Perfect Smoothie Bowl" blog post. The only thing that I did differently is use strawberries instead of cherries.
For dinner, I had an Asian vegetable and chicken stir fry with quinoa. This meal does not take long to make and is super easy.

Since I love food and cooking, making these meals/snacks is really fun for me. I hope this blog post inspires you to try making some of these meals/snacks!
